Halloween is over and the holiday season is in full swing. I absolutely love hosting Thanksgiving each year. It brings family and friends to my home to celebrate one another, give thanks for all we have and watch the Macy's Thanksgiving Day Parade and football, of course. It's the most gluttonous day of the year and for those of us who love to cook, it's our day to shine.
I've spent several years perfecting my roast turkey and I promise you won't be disappointed with this recipe. The first secret to a moist, delicious turkey is brining...for several days. Brining normally involves marinating your turkey in a mixture of water, salt, sugar and spices. However, I have found a "dry" brine works best. I rub my turkey with salt, pepper and lemon zest and stuff the cavity with fresh herbs and garlic. Seal it in a large roasting bag and refrigerate it. The only liquid is the natural juice from the bird. I brine my turkey for 3 days. Yes, that means you need your bird and all ingredients ready to go on MONDAY!
The other secret? Remove it from the roasting bag the night before Thanksgiving and put it back in the refrigerator overnight. This allows the skin to dry out and helps create that perfect roast turkey - juicy on the inside and crispy on the outside. And the drippings make THE best gravy.
